- USES: Rice Koji can be used to make healthy fermented foods, beverages and marinades. It is the base for koji water, sweet koji / amazake, salt koji, soy sauce koji, sake, miso, vinegar, pickles, soy sauce, shochu / soju, and awamori. Koji rice is also used for dry aging meats.
