- El queso San Simón da Costa con Denominación de Origen Protegida (D.O.P.) se elabora en la comarca da Terra Chá (Lugo), a partir de leche entera y pasterizada de vaca. Es identificado, particularmente, por su peculiar ahumado con madera de abedul y su forma entre trompo y bala, así como la corteza exterior brillante, lisa y de color pardo. Con la finalidad de conocer las propiedades reológicas y su relación con las características bioquímicas de quesos elaborados por las 8 queserías acogidas a la D.O.P., en el año 2011, se analizaron 16 quesos con periodo de maduración entre 45 y 50 días (tiempo adecuado para su consumo). Se determinaron parámetros de composición, físico-químicos y la intensidad de la degradación proteica y se correlacionaron con propiedades mecánicas (fuerza y deformación de rotura) y viscoelásticas a baja deformación (ensayos estáticos y dinámicos de oscilación).
